INGREDIENTS::
∙ NOODLES - ONE PACKET
∙ WATER - FOR BOILING NOODLES
∙ CORN FLOUR- 2 TBSP
∙ SALT - TO TASTE
∙ OIL FOR FRYING + 1 TBSP OIL
∙ SPRING ONION - 1\4 CUP
∙ GREEN CHILLIES - 2 3 NOS (SLIT)
∙ GARLIC - 2 TBSP ( CHOPPED)
∙ GINGER 2 TBSP (JUILENNE)
∙ CARROTS - 1\2 CUP (JUILENNE)
∙ CAPSICUM -1 CUP9 JUILENNE)
∙ CABBAGE - 1 CUP
∙ SUGAR - 1 TSP
∙ TOMATO SAUCE - 4 TBSP
∙ RED CHILLI SAUCE - 1 TBSP
∙ SOY SAUCE - 1 TSP
∙ SALT
∙ BLACK PEPPER - A PINCH
∙ WATER - 250 ML
∙ CORN STARCH - I TBSP
∙ WATER - 2 TBSP
∙ SPRING ONION GREENS
∙ VINEGAR - 1 TSP
∙ EGG - 1 (OPTIONAL)

INSTRUCTIONS:
∙ BOIL THE WATER IN A WOK OR A PAN,ADD SALT AND OIL,ADD THE NOODLES AND COOK FOR 6-7 MINUTES
∙ RINSE THE BOILED NOODLES WITH COLD WATER
∙ POUR A FEW DROPS OF OIL INTO THE BOILED NOODLES AND MIX WELLL TO AVOID IT FROM STICKING TO EACH OTHER
∙ WAIT UNTIL THE NOODLES ARE DRY
∙ ADD CORNFLOUR AND SALT INTO THE BOILED NOODLES AND MIX WELL
∙ HEAT OIL IN A PAN AND SHALLOW FRY THE NOODLES UNTIL GOLDEN BROWN.BE CAREFUL ON THIS STEP
∙ MEANWHILE LETS PREPARE THEVEGGIE SAUCE
∙ HEAT 1 TBSP OIL IN A PAN AND ADD SPRING ONION ,GINGER AND GARLIC
∙ SAUTE FOR 1-2 MINS ON MEDIUM FLAME
∙ ADD ALL THE VEGGIES STEP BY STEP AND SAUTE FOR ANOTHER 2 MINS
∙ ADD SUGAR AND COOK FOR 2 -3 MINUTES
∙ ADD THE SAUCES ,SALT AND PEPPER AND COOK FOR 1- 2 MIUNTES
∙ ADD WATER AND THE CORN FLOUR MIXTURE
∙ COOK UNTIL THE SAUCE THICKENS
∙ ADD THE SPRING ONION GREENS AND VINEGAR,MIX WELL
∙ POUR THE VEGGIE SAUCE OVER THR FRIED NOODLES
∙ TOP IT OFF WITH A FRIED EGG
∙ SERVE HOT!
